Are Crawfish Good Eats?

Crawfish are an excellent source of protein. Fat content of washed crawfish tail meat is only about 1% of the Recommended Daily Allowance (RDA.) Crawfish muscle fibers are shorter than the muscle fibers in red meats and , consequently, more easily digested.

In 1994, The Louisiana Crawfish Promotion and Research Board conducted nutritional analysis of unwashed (fat-on) frozen crawfish tail meat. The purpose of that research was to develop a nutritional label that could be used by the entire industry. The information that was developed was as follows.

Are Crawfish Lobsters? Lobsters Crawfish?

"The diversity and distribution of North American Triassic terrestrial burrowing and aquatic freshwater crayfish fossils demonstrates that their evolution began earlier and may reciprocate our views of the lobster-crayfish relationship. Crayfish fossils and the burrows attributed to their activity in the Upper Triassic Chinle Formation date to about 225 million years in age during the presence of the Pangean supercontinent. Trace and body fossil evidence confirms that crayfish were established across ecological settings ranging from fully terrestrial to fully aquatic. The distribution of Triassic aquatic crayfish also included areas in Arizona (Miller and Ash, 1988) and in North Carolina (Olsen, 1977). The diversity, paleogeographic distribution, and ecological specialization of the Triassic crayfish implies that the group evolved possibly as early as or earlier than the Permian (286 million years ago).
The crayfish body and trace fossil evidence may suggest that lobsters,
thought to have evolved early in the Triassic (245 million years ago),
evolved from aquatic freshwater crayfish that inhabited coastal streams, rivers, and lakes. The majority of lobster body fossils occur in the Jurassic and Cretaceous with only a hand full from the Triassic (e.g., Glaessner, 1969)." - Stephen T. Only area restaurants can enter. There is a formal judging and judging by the public, as well as mass consumption by the public. You will need to have a staff, food handlers licenses, a licensed kitchen, a temporary restaurant license, a $1,000,000 liability insurance policy, and prepare a lot of your recipe for this contest. 3 to 5 thousand hungry people will attend this annual event.

How do I enter the "Atsa My Dawg" Dog Show? Requirements? Entry Fee? Prizes?

To enter the Dog Show fill out an entry form at the Festival Information Booth or at the Dog Show area after 12:00 p.m.
Requirements: You can only enter a real Dog. The Dog must be on a leash.
Entry Fee: $5.00 per category, enter one or all four.
  - Best Looking Dog.
  - Best Dog Trick. (Maximum of 2)
  - Best Dressed or Costumed Dog.
  - The Frisbee Toss.
Prizes: Gift Certificates, Ribbons and Bragging Rights. "Atsa My Dawg!"

How do you eat Crawfish?

Eating Crawfish really isn't a challenge. The best way to learn... see it for yourself at the Festival. See the Crawfish eating contest and watch other experienced folks. My Daughter was cracking them open at age 6, and in no time you will be too. We may go into more detail later.

How much do Crawfish at the Festival cost?

Crawfish dishes at the Crawfish Cook-Off Friday are served in a sample size for 1 ticket (one ticket = one Dollar) and dinner sizes for additional tickets. The price for whole Crawfish is determined by the individual vendors. Last year (2005) the whole Crawfish were $7.00/dozen on Friday and $8.00/dozen on Saturday.

Is the Cook-Off a Crawfish dinner?

Yes and no. For the public it's Dinner and a Concert, near the lake at Tualatin Commons, on a beautiful August evening. For area Restaurants it's a Contest for their Original Crawfish Recipe, judged by a panel and by the public. It's not a southern style Crawfish Boil, there are whole Crawfish, but many other dishes are available to sample and or eat for dinner. Enjoy it with a glass of wine or beer but don't forget to vote for the Peoples Choice.

What does admission to the Festival cost?

On Friday at the Crawfish Cook-Off there is no admission fee. Saturday admission to the Festival (Community Park) is $3.00, $2.00 for ages 6-12 years or above 55 years, under 5 years admision is free! Entertainment on all three stages is included and much more.

Where does the Festival get the Crawfish?

Pacific Seafoods supplies the most Crawdads for the Festival from Lake Billy Chinook here in Oregon.
